Stock Base

Ingredients

  • 4 tsp The Natural Stock Co Beef Stock concentrate
  • 2 onions, roughly chopped
  • 30g ginger, roughly chopped
  • 3 garlic cloves, crushed
  • 1 bunch coriander, stalks chopped and leaves reserved
  • 1 Tbsp vegetable oil
  • 1 kg beef (shin or chuck or oyster blade) cut into large pieces, about 6cm
  • 3 spring onions, sliced into 3 cm lengths
  • 1 cup hot water
  • 40g dark brown sugar
  • 100ml soy sauce
  • 2 Tbsp tomato paste
  • 1 tsp black peppercorns

To Prepare

Preheat oven to 150 °C

  • To make the ginger curry paste, add the beef concentrate, onions, ginger, garlic and coriander stalks to a food processor and whizz to a paste.
  • Heat the oil in a large ovenproof pan. Add the beef chunks, in batches, and fry until browned. When each batch is browned, transfer the beef to a plate.
  • To the pan, add the ginger paste and gently fry, scraping up any beef bits, until the paste is fragrant and softened.
  • Stir in the sugar, soy sauce, tomato paste and peppercorns and cook for another minute.
  • Add 1 cup of hot water and stir through the sauce to combine.
  • Return the beef, spring onions, coriander and any juices to the pan, then push the meat into the liquid.
  • Bring the sauce to a gentle simmer, cover the dish with a tight-fitting lid or baking paper and foil, then place in the oven and cook for 2 hours or until the beef is meltingly tender.
  • Check on liquid levels regularly, and top up with beef stock if required.
  • Serve with jasmine rice, steamed beans and reserved coriander.

To serve

Steamed Jasmine rice, Green beans, steamed, Reserved coriander leaves
